Ingredients
  

  • 200 g Ground Almonds
  • 200 g Ground Almonds
  • 200 g Caster Sugar 1
  • 1 g Bicarbonate of Soda
  • 15 g Almond Essence
  • 1.5 g Vanilla Extract
  • 3 Egg Whites
  • 50 g Caster Sugar 2
  • 50 g Icing Sugar

Method
 

  • Preheat the oven to 150℃/Gas Mark 2.
  • In a large bowl, combine the ground almonds, caster sugar, and bicarbonate of soda. Using a whisk, stir the dry ingredients to ensure even distribution.
  • Add the egg whites, almond essence & vanilla extract to the dry mixture and stir with a wooden spoon until you have a paste consistency.
  • Divide the mixture into 20g and, using the palm of your hands, roll these into balls.
  • Place the caster sugar (2) and icing sugar into separate small bowls and dip each ball into the caster sugar, then icing sugar.
  • Place each ball onto a lined baking tray and gently press down on the top of the ball & very slightly flatten it.
  • Place the baking tray in the oven and bake for around 20 mins, or until the biscuits are golden and cracked on top.
  • Once baked, remove from the oven and place on a cooling rack then, enjoy!
